Nu Mex Big Jim-(Capsicum annuum)-This pepper was developed in the 1970s by the Chile Pepper Institute at New Mexico State University. It has been listed in the Guinness World Book of Records as the largest pod producer! The peppers can get over 12 inches long and weigh over 4 ounces. The Nu Mex Big Jim Chile plants only get just over 2 feet tall but can produce as many as 30 peppers per plant. They have a mild to medium heat and ripen from green to red. Like the Hatch Chile they get a rich savory flavor when roasted. Ideal for stuffing!
