Pelso-(Capsicum annuum)-This is an Hungarian Paprika type that has mild heat. It was originally sourced from Geza Korbely a man from Hungary who brought many pepper and tomato varieties to North America. The Pelso ripen from creamy white to orange red. They take a very long time for final ripening. Flavor is sweet but comes out more when cooked. Not much flavor in creamy white stage unless it is cooked. Like a hatch or a poblano not meant to be eaten raw unless fully ripened. The Pelso fruits grow pointing up and are about 3 inches in diameter and 4 inches long coming to a point at the end. They can be roasted, fried, stuffed, sauced and eaten in salads (salads if fully ripe). The Pelso chile plants grow about 2 feet tall.
